Barley Bean Parfait

SERVES 3-4

Serving Size: 235g

Red Bean Layer
Water 1.5L
Red Bean (soaked overnight) 100g
Rock Sugar 60g
Chia Seeds 15g
Pandan Leaves 12g

Barley & Barley Jelly
Water 2.5L
English Barley 125g
Rock Sugar 150g
Pandan Leaves 12g
Agar Powder 10g

DIRECTIONS

For Red Bean Topping:

  • In a large saucepan, boil water with pandan leaves under medium heat.
  • Add red bean and reduce fire to medium-low heat for 1 hour, cover with a lid.
  • After 1 hour, add rock sugar in and simmer for 5 mins.
  • Turn off fire and add chia seeds and stir.
  • Leave it to cool and chia seeds to expand.

For Barley:

  • Add barley, pandan leaves, and water into a large saucepan and cook for 30 mins under medium heat.
  • After 30mins, add rock sugar and boil for another 10 mins.
  • Strain 1L of barley water into a large bowl and let it cool. Keep the cooked barley grains aside.

For Barley Jelly:

  • After the barley water has cooled, transfer to a medium saucepan and add agar powder.
  • Stir continuously and bring to boil over low heat.

Assemble & Serve:

  • In a tall glass or a cup, layer by adding 50g of cooked barley grains, 170g of barley jelly, and 95g red bean topping.
  • Garnish with mint leaves and serve chilled.

TIPS

  • An alternative method for cooking the red beans would be to use a slow cooker overnight!
