Soba Bean Noodles

SERVES 2

Serving Size: 240g

French Beans (chopped) 100g
Soba  90g 
Red Bell Pepper (sliced thinly)  80g
Black Beans (soaked overnight) 50g
Yellow Zucchini (sliced thinly) 40g
Shiitake Mushroom (sliced thinly) 40g
Lotus Seed (cut into 4 parts) 20g
Onion (minced) 15g
Ginger 10g
Sesame Seeds 10g
Vegetarian Oyster Sauce 2 tsp
Garlic (minced) 3 Cloves
Vegetable Oil (for frying) 1 tsp
Sesame Oil 1 tsp
Light Soy Sauce 1 tsp 
Dark Soy Sauce 1 tsp
Salt Dash

DIRECTIONS

For beans:

  • Bring a pot of water to a boil.
  • Add lotus seed and black beans. Cook for 45mins.
  • After cooking, separate the beans and mash half using a masher.
  • For soba:
  • Bring a pot of water to a boil.
  • Cook soba for 2 minutes .
  • Cool noodles in a bowl of iced water.

Assembly:

  • Heat vegetable oil in a medium pan under medium heat.
  • Add ginger, onion and french beans. Stir-fry for 4 mins.
  • Add mushrooms and stir fry for 2 mins.
  • Add garlic, spring onion, bell pepper, and zucchini. Stir fry for 1 min.
  • Add light soy sauce, dark soy sauce, and vegetarian oyster sauce, water, lotus seeds and black beans and bring to a boil.
  • Stir in soba and serve hot.

TIPS

  • For ease of cooking, canned black beans can be used. Drain the water in the can and rinse the beans before using!
